Pre-heat your oven to 180°. Sift together in a large bowl your dry ingredients. Once combined stir through your Chocolate chips and set aside. In another bowl, beat together the eggs, vanilla, milk and oil until combined.
Gradually add the dry ingredients to the wet ingredients 1/3 at a time. Once combined place the mixture into the muffin cases. Add some extra chocolate chips to the top of the muffins and bake at 180° for 15 to 20 minutes or until a skewer comes out clean.
