Allow the beef to come to room temperature, place the beef into the baking tray, drizzle with olive oil, seasoning and herbs. Prepare the vegetables, drizzle with olive oil season and add the herbs.
Cook the beef at 200° for 1 hour and 40 minutes. Within 30 minutes of placing the beef in the oven place the vegetables in the oven also. Remove from the oven place into foil and allow to rest for 15 minutes before carving.
Notes
This cooking time or achieve a medium to medium rare finish. If you would like a medium well to well done allow the beef to cook for a further 40 minutes.
