In a large bowl, add all the marinade ingredients and mix until combined. Taste test the marinade to ensure that it is balanced.
Place the chicken and marinade in a ziplock bag. Ideally, allow to marinate for a minimum of 4 hours or overnight. Every few hours, rotate the bag to ensure the marinade is evenly distributed onto the chicken.
Preheat the Oven to 200°. Place the chicken onto a baking tray ensuring it is skin side up. Pour the remaining marinade over the chicken within the tray. Cover with foil and allow the chicken to cook through completely.
Once the chicken is cooked, remove the foil and return it into the oven to allow the chicken to become golden. Every 2 to 3 minutes, baste the chicken with the marinade that is already in the tray. Once golden, garnish with sesame seeds and spring onion.
