Lemon Dill Fish

An unbelievably simple fish meal with less then 5 minutes prep time accompanied by the beautiful flavours of lemon and dill.

Equipment

  • Baking tray
  • Mixing bowl
  • Garlic press

Ingredients
  

  • 4 Perch Fillets
  • 3 Garlic Cloves  (crushed)
  • ½ tsp Dried chilli
  • 1 tsp Dried oregano  
  • 1 tbsp Fresh parsley
  • 1 tbsp Fresh dill 
  • 200 ml Olive oil
  • 1 punnet Cherry tomatoes
  • Zest of one lemon
  • Juice of one lemon
  • Salt and pepper

Instructions
 

  • Preheat oven to 200°. Combine herbs and spices with the olive oil.
  • Place the perch fillets into a baking tray. Add cherry tomatoes. Drizzle herb oil over perch fillets. Bake for 25 minutes or until fish flakes apart with a fork.
