Preheat oven to 200C. Peel and cut the potatoes in half. Place the potatoes cut side down on the chopping board and make thin evenly spaced cuts about two-thirds deep. Sprinkle potatoes with herbs and seasoning and drizzle with olive oil. Bake at 200C for 50 minutes until golden and crispy.
