Loaded Sweet Potatoes
Equipment
- Baking tray
- Baking paper
- Mixing bowl
Ingredients
- 3 medium Sweet potato
- 1 Red onion (diced)
- ½ cup Corn kernels
- ½ cup Capsicum (diced)
- ½ cup Coriander (chopped)
- 1 Lime (juiced)
- ½ Avocado (diced)
- Salt & pepper
- Sour cream
- Kewpie sriracha mayonnaise
Instructions
- Pre-heat the oven to 200°. Wash and dry your sweet potatoes place them on a baking tray. With a fork, pierce all around the sweet potatoes. Spray lightly with some canola oil and place into the oven to bake for 50 minutes or until a knife pierces through with ease.
- For the salsa, chop all the ingredients and season with salt, pepper and lime juice. Set aside.
- Once the sweet potatoes are cooked, slice them down the middle and remove some of the sweet potato filling. Mix sweet potato filling with the salsa and placed back into the Sweet potato. Garnish with coriander, sour cream and the spicy sriracha mayo.
