Chicken Tomato Basil Pasta
Equipment

Ingredients
- 1 tbsp Olive oil
- 1 tbsp Butter
- 500 g Chicken breast (sliced)
- 1 Red onion (diced)
- 6 Mushrooms (sliced)
- 250 g Cherry tomatoes
- 1 cup Chicken stock
- 1 cup Napoletana sauce
- ½ cup Cream (thickened)
- 5 Garlic cloves (crushed)
- 2 tbsp Chef it up spice mix
- 1 cup Parmesan cheese
- ½ cup Basil
- ⅓ cup Pasta water
- 500 g Pasta
Instructions
- In the frypan, heat up the butter and olive oil. Cook your chicken and remove from the frypan. Set aside.
- In the same frypan sautee your onion until soft. Add the mushrooms and cherry tomatoes. Cook until the tomatoes begin to break down.
- Add the chicken stock in order to deglaze the pan. Add in the garlic and Napoletana sauce, season with salt and pepper, then add the cheft it up spice blend. Allow to cook for 5 to 10 minutes. Once it has thickened. Add the cream.
- Return the chicken to the pan and cook for 5 minutes. Add in the pasta water that you have reserved. Add the Parmesan cheese and turn off the heat.
- Add in the fresh basil and the cooked pasta. Stir until combined and the cheese has melted. Serve immediately.

Alternatively, this dish can be made vegetarian by following the recipe without the chicken, or you can make this with your choice of seafood. My recommendation would be using prawns.
