Moroccan Couscous Salad with Lamb Cutlets
Enjoy for lunch, or as a side with whatever you desire. This Moroccan couscous dish is sure to be a hit
Equipment

Ingredients
Lamb
- 1 kg Lamb cutlets (can also use backstrap)
- ⅓ cup Olive oil
- 1 tbsp Moroccan spice
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Sweet paprika
- Salt & pepper
Moroccan Couscous
- 1½ cups Medium grain couscous
- 1½ cups Boiling water
- 2 tbsp Moroccan spice
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 Clove of garlic (crushed)
- ½ tsp Dried chilli (optional)
Salad
- ½ cup Pomegranate seeds
- 1 Cucumber (sliced)
- ½ cup Sundried tomato (sliced)
- 1 cup Rocket
- ½ cup Chickpeas
- ½ Red onion (sliced)
- 1 cup Honey roasted pumpkin
- ½ cup Coriander (sliced)
- ½ cup Mint (sliced)
Honey roasted pumpkin
- 1 cup Pumpkin (diced)
- 2 tbsp Honey
- Canola spray
Cumin dressing
- ½ cup Greek yogurt
- ½ tsp Cumin powder
- 1 tbsp Coriander roots (finely diced)
- 1 Garlic (small)
- 3 tbsp Water (depending on desired consistency)
- Salt & pepper
Instructions
Lamb Cutlets
- Add herbs and spices to the olive oil and mix until a marinade is formed. Add this to the lamb and marinate for at least 30 minutes. Meanwhile, add the pumpkin to a baking tray and spray with canola spray. Cook at 200° until soft. Remove from oven and drizzle over the honey. Allow to cool.
- To prepare the dressing add the yoghurt, garlic, cumin powder and coriander roots to a bowl and stir until combined. Add the yoghurt, water and seasoning. Add more water if a thinner consistency is desired.
Couscous
- In a large bowl add the spices, crushed garlic and the couscous. Mix until combined. Add the boiling water and cover with a plate. Allow to sit for 15 to 20 minutes. Once ready fluff the couscous with a fork
- Once the couscous is cool, add the salad ingredients and mix until combined.
- Cook the lamb to your desired preference, you can either enjoy the lamb on the side or slice it and toss it through the salad.
