Mediterranean Chicken Salad


Cold, creamy, nutritious and delicious. Perfect smoothie to drink every morning for breakfast this summer.

Mediterranean Chicken Salad

This salad will make for a quick lunch time meal or even a side dish for the family.

  • Frypan



  • 1 packet Rocket
  • ¼ Red cabbage
  • 1 punnet Cherry tomatoes
  • 2 Cucumber
  • 1 Red onion
  • 100 g Crumbled feta
  • 1 tsp Oregano

Chicken Rub

  • 2 Chicken breasts
  • 1 tbsp Italian herbs
  • 1 tsp Sweet paprika
  • 1 tsp Dried oregano
  • 1 tbsp Montreal steak seasoning
  • Olive oil (enough to coat chicken)


  • 1 Lemon
  • cup Olive oil
  • 3 tbsp Zataar


  • Slice the chicken breast and marinade with the chicken. Meanwhile slice all the salad ingredients and set aside. Heat the olive oil in a frypan and cook the chicken.
  • Layer the salad ingredients, place the chicken on top and drizzle with dressing. Crumbled feta over the salad.
