Hidden Vegetable Sausage Rolls
These small but delicious sausage rolls are not only eye-catching, but are full of bright flavor and pack a nutritious punch thanks to the 5 hidden vegetables within. A must try for all but most importantly, for fussy eaters.
Equipment
- Large Bowl
- Baking paper
- Baking tray
- Sharp knife
- Pastry brush
Ingredients
- 1 kg Sausage mince
- 3 Mushrooms
- ½ Zucchini
- ½ Carrot
- ½ Onion
- ½ cup Corn kernels
- 2 Eggs (One required for the egg wash)
- ½ cup Bread crumbs
- 1 packet Puff pastry
- 2 tbsp Sesame seeds
- 2 tbsp Poppy seeds
- Salt and Pepper (Amount subject to personal preference)
Instructions
- Preheat oven to 200°. Finely dice all of the vegetables. Once all of the vegetables have been finely diced. Combine them with the sausage mince, eggs and bread crumbs.
- Continue on to cut the puff pastry sheets in half (or thirds if smaller sized portions are desired). Begin to place even amounts of sausage mince mixture along the edge of the puff pastry sheets.
- Roll the pastry to enclose the mixture and continue on the pinch the ends together. Baste the pastry with the egg wash. Sprinkle on Sesame and poppy seeds.
- Bake in oven for 20 minutes (or until golden brown).
