Mediterranean Chicken Salad
This salad will make for a quick lunch time meal or even a side dish for the family.
Equipment
- Frypan
Ingredients
Salad
- 1 packet Rocket
- ¼ Red cabbage
- 1 punnet Cherry tomatoes
- 2 Cucumber
- 1 Red onion
- 100 g Crumbled feta
- 1 tsp Oregano
Chicken Rub
- 2 Chicken breasts
- 1 tbsp Italian herbs
- 1 tsp Sweet paprika
- 1 tsp Dried oregano
- 1 tbsp Montreal steak seasoning
- Olive oil (enough to coat chicken)
Dressing
- 1 Lemon
- ⅓ cup Olive oil
- 3 tbsp Zataar
Instructions
- Slice the chicken breast and marinade with the chicken. Meanwhile slice all the salad ingredients and set aside. Heat the olive oil in a frypan and cook the chicken.
- Layer the salad ingredients, place the chicken on top and drizzle with dressing. Crumbled feta over the salad.
