Triple Chocolate Chip Muffins

Equipment

  • Muffin tray
  • Mixing bowl
  • Mixing spoon
  • Spatula

Ingredients

  • 250 g Self raising flour
  • 1 tsp Baking powder
  • ½ tsp Salt
  • 6 tbsp Cocoa powder (unsweetened)
  • 130 g Caster sugar
  • 75 g Choc chips (plus extra for the top)
  • 1 Egg
  • 2 tbsp Vanilla
  • 270 ml Milk
  • 100 ml Vegetable oil

Instructions

  • Pre-heat your oven to 180°. Sift together in a large bowl your dry ingredients. Once combined stir through your Chocolate chips and set aside. In another bowl, beat together the eggs, vanilla, milk and oil until combined.
  • Gradually add the dry ingredients to the wet ingredients 1/3 at a time. Once combined place the mixture into the muffin cases. Add some extra chocolate chips to the top of the muffins and bake at 180° for 15 to 20 minutes or until a skewer comes out clean.
